Crabs are decapod crustaceans of the infraorder Brachyura, which typically have a very short projecting “tail”  , usually entirely hidden under the thorax. They live in all the world’s oceans, in fresh water, and on land, are generally covered with a thick exoskeleton and have a single pair of claws. Kick over a rock or a chunk of turf along the coast of Maine and chances are a horde of invasive green crabs will scurry out. Since their accidental introduction to the North American coast by European ships in the early 1800s, green crabs have become among the most common creatures in the region. Commercial crabbers and lobster fishermen motor past millions of them every day because the credit card-sized crabs—though perfectly edible—are too small to be worth manually shucking.

A new processing technique explored in a scientific paper by researchers from the University of Maine could change that. By experimenting with a mechanical means of extracting meat from green crabs, they hope to create a market for the ecologically disruptive animals.

As a food scientist who specializes in reducing waste of seafood, researcher Denise Skonberg had long been aware of the Paoli One Step Deboner, a machine that resembles a meat grinder the size of a truck transmission. After workers strip off the chicken meat, carcasses are put in the machine, deboned, and emerge as a paste-like meat product. The machine can also be used for green crabs.

As far as crabs go, the European green crab might not look like much. They’re small — only about 4 inches wide — and lack the giant claws of fiddler crabs or spindly limbs of king crabs. But don’t be fooled. Green crabs are voracious predators that rank among the world’s worst invasive species.

Scientists estimate green crabs cost the fishing industry close to $19 million annually on the East Coast alone. And in recent years, they have been spotted along the West Coast from Monterey Bay to British Columbia.

A consortium of California ecologists, dubbed the Green Crab Project, is striking back. The team has been removing thousands of European green crabs from a small inlet north of San Francisco called Seadrift Lagoon.

This sleepy Marin County vacation spot holds the highest concentration of the invasive species on the West Coast. When the Green Crab Project launched in 2009, the crabs’ population in Seadrift approached 90,000.

Crabs are marine-dwelling crustaceans. Besides crabs, crustaceans include creatures such as lobsters and shrimp.

Crabs are called decapodsDeca means ten and pod means foot. Crabs have 10 feet – or legs. Two of those legs are the crab’s characteristic large front claws, or pinchers. Crabs use these claws for cutting, crushing, and grasping.

Crabs can be amusing to watch with their funny way of walking sideways. They walk this way because their legs are attached to the sides of their bodies. And, their joints bend outward, unlike our knees, which bend forward.

They are also easily recognized by their eyes. Their compound eyes, which are on stalks that grow from the top of their bodies like snails, help them to see better in low light conditions and spot their prey.

Crabs are omnivores, which means they eat both plants and animals. Their diet consists of foods such as algae, worms, sponges, and other crabs. Crabs are also eaten by humans. Some crabs, such as hermit crabs, are kept as pets.
